“Ahead of one's time,” is a phrase often misused in our society, but perfectly apropos in the case of the talented and delightful Beverly Cone (Reedy).

Nearly two decades ago a small shop, in an out of the way location on Phila Street, in Saratoga Springs, began displaying imported olive oils, balsamic vinegars and dozens of other exotic products that were all but impossible to find in our area at that time.

As an executive chef and having just purchased the legendary Siro’s in Saratoga, I was thrilled to hear about this place and rushed right down to see what it was all about. The wonderful sweet smells of baking cakes and pastries began in the parking lot, and on entering through rack after rack of beautifully presented exotic wares, I caught my first glimpse of a very beautiful, but somewhat harried, Beverly covered head to toe in flour. Let the laughter begin. Through the years that sense of humor along with exquisitely prepared foods and an ever changing array of fabulous retail products have become the hallmark of Beverly’s Specialty Foods. Now part of the fabric of Saratoga Springs, Beverly and her namesake shop continue to provide a classic culinary destination for residents and visitors to Saratoga alike. I know that the recipes in this book will bring the passion and joy of Beverly’s cooking to your table as they did to mine.

When Beverly opened her Saratoga Springs Restaurant, it quickly became a have-to-go-place. People went for the love of food, which was always fresh and original and perfectly delicious, and for the good conversation and great friends.
